12 Hour Butter Horns

Prep work: soften yeast in luke warm water

Combine: ¾ c hot milk
½ c butter
½ c sugar
¾ tsp salt
3 well beaten eggs
1 cup flour
yeast
mix well
then add 2 ½ - 3 c flours

More prep: Allow to rise 4-6 hours or over night at room temperature
Roll out
Let rise at room temperature 4-6 hours

Bake: 375 degrees
12 minutes

Blueberry Muffins

Serves: 10-12 muffins

Mix: in large bowl
1 ¾ c flour
1/3 c sugar
2 ½ tsp baking powder
¾ tsp salt

Combine: 1 beaten eggs
¾ c milk
1/3 c oil
add to dry mixture
stir until moistened
add ¾ c blueberries

Bake: 400 degrees, 20-25 minutes

Buttermilk Scones

Combine: in large bowl
1 qt buttermilk warmed
3 T. sugar
2 beaten eggs
2 T. oil
1 ½ tsp salt
3 tsp baking powder
½ tsp soda
2 pkg soften yeast
4 c flour

Prep work: beat ingredients until smooth and well mixed
add 4 c flour
allow to rise
cover until double
punch down and place in refrigerator over night
roll out just before frying

Fry: 375 degrees

Honey Butter:1 c butter
1 ¼ c honey
1 egg yolk
beat ingredients 10 minutes with beaters

Chicken Rolls

Need: 2 pkg crescent rolls

Stir: 3 oz cream cheese
3 oz cream cheese with chives
salt and pepper
¼ c chopped pecans
2 c diced chicken
1/3 c mushrooms

Prep work: place 1 TB filling on each crescent roll
Roll up
Dip in melted ¼ c butter and 1 ½ c seasoned stuffing

Bake: 400 degrees for 20 minutes

Sugar Cookies

Serves: 2 dozen; 24 small

Cream: ½ c butter
1 c sugar
2 tbs cream
2 eggs
1 t. vanilla

Add: 2 ½ c flour
½ t. salt
¼ t. soda

Refrigerate: 4-5 hours or overnight

Bake: on non-greased cookie sheet
400 degrees for 6-8 minutes

Bread Sticks

Ingredients: 1 TB yeast
1 ½ c water
1 T malted milk powder
1 T honey
1 tsp salt
4-4 ½ c flour

Prep work: Roll into bread sticks
Put on egg wash (1 egg, ½ tsp water)
Let rise 15 minutes

Bake: 400 degrees for 15 minutes

Hamburger and Rice Casserole

Brown: 1 ½ lb hamburger
1 chopped onion

Bake: Hamburger
Onion
1 can cream of mushroom soup
1 can cream of chicken soup
1 ½ c water
1 tbs soy sauce
2 c cooked rice
bake for 30 minutes at 350 degrees

Serve: top with Chinese noodles

Ham and Potato Casserole

Cook: 1 c chopped onion
½ c chopped celery
¼ c butter
¼ c flour
2 ½ c milk

stir in: 2 T parsley
1 t Salt
¼ t pepper
1 c shredded cheese
4 cups cubed potatoes
3 c cubed ham

Ham Hock and Beans

Cook: 1 ½ c beans
2 qta cold water
simmer ingredients for 2 minutes
Remove from heat and let stand one hour

Add: ham hock
½ tsp salt
bay leaf
pepper
cover and simmer for 3-3 ½ hours

Mexican Casserole

Serves: 6-8

Brown: 1 lb hamburger

Combine: hamburger
1 – 1 lb can kidney beans (drained)
1 – 15 oz can enchilada sauce
1 – 8 oz can tomato sauce
1 tb chopped onions

Need: 1 – 6 oz pkg corn chips
2 c shredded cheese
1 cup sour cream

Bake: Half of the cheese and corn chips
Put into a 9x13 in pan
Cover with sour cream
Bake at 350 degrees for 25-30 min
Then sprinkle on the rest of the cheese and corn chips
Bake for 5 more minutes

Sean's Beloved Cheese Soup

Cook: ½ c celery
½ c onion
2 cubes butter
1 ½ c flour
3 qts water
10 chicken boulin cubes
15 oz cheese whiz

Taco Salad

Brown: 1 lb hamburger
1 c onions

Simmer: hamburger
Onions
1 – 8 oz can tomato sauce
1 ½ c water
1 tsp chili powder
1 tsp cumin
2 tsp sugar
1 tsp oregano
¼ tsp pepper
1 ½ t salt

Serve: over corn chips, lettuce, cheese
With tomatoes on top

Pam's Taco Soup

Fry: 1 lb hamburger and onions

Add: 3 cans kidney beans (don’t drain)
Tomato sauce or paste
Quart tomato juice
Taco seasoning

Serve: with cheese, chips and sour cream

SISTER KENEDY’S POTATO CASSEROLE

6 lg potatoes boiling, cool, peel, grate
½ c butter melted
1 can cream of chicken soup
pint sour cream
1 c cheese
chopped green onions

mix everything together and put into a 9x13 pan
mix with 2 TB melted butter
put on top of potatoes

Pam's Lasagna

Sauce:
1 large can tomato sauce ( 1cup)
1 small can tomato paste
1 lb hamburger
1 onion chopped
garlic (just sprinkle)
½ tsp oregano
salt and pepper to taste
1 small pkg American cheese grated
mozzarella cheese grated

Brown hamburger, onion and garlic. Add tomato sauce and paste. Add oregano, salt and pepper. Add enough water to make medium sauce (1 can)
Simmer 1 ½ - 2 hrs. Add more water if needed.
Bake at 350 degrees for 30 minutes

Pam's Chili

Boil:
cover 2 ½ c chili beans in water
bring to a boil
boil 3 min
drain and rinse

Combine:
put beans in a pan with 6 c water
2 bay leaves
1 tsp salt

Cook:
simmer until tender

Add:
2 lbs hamburger
2 med browned onions
1 tsp cumin
1 tsp brown sugar
1 tsp chili powder
qt tomato juice
scant c catsup
1 can tomato sauce

Cook:
heat simmer 1 hour

Peanut Brittle

PEANUT BRITTLE

Mix:
2 c sugar
1 c white karo
1 c hot water
stir ‘til sugar dissolves
Cook:
232 degrees
Add:
2-3 c raw Spanish peanuts
Cook:
to very light straw color
oven 298-300 degrees
remove
Add:
2 tsp soda
1 tsp vanilla
2 tbsp butter
stir in good
Serve:
pour in buttered pan
